Fried fish, no grease, please.

I used to love getting a fish sandwich from the fast food restaurants around town. It was tasty and crunchy and an alternative to the ubiquitous cheeseburger. Even though I dont cook a lot of fish, trying to find a fried fish recipe that would taste good and not be greasy turned out to be a lot harder than I thought. It depends on how you are going to cook it, for one thing. You can deep fry it, in which case it absorbs tons of grease (or oil, I should say) or pan fry it for a little less greasiness but probably oven frying is the way to go. You use less grease to begin with so you have less to try to drain off.
